MUGONGOWAZI is a Swahili expression meaning “a back cut open,” commonly used to refer to the bare fish bones left after filleting: head, fins and spine of some fish species as the Nile perch. Any fish captured in the fishing net is acceptable for sun drying, wasting no part of it, nor even the remains.
